The wind is crisper, the leaves are gradually turning brilliant colors and we’re starting to go from wearing shorts to digging out our sweaters here in Vermont. As we announced last month, our beloved Pumpkin Granola is back for 2021, but only through October 31st. It’s been selling really well, and we’re pleased so many of you have welcomed this revival with open arms. We love the perfectly spiced flavor, too! In honor of this being the last month of Pumpkin this year, we’re sharing how you can get into the autumnal spirit, thanks to our product.

Recipe: Zucchini Bread with Pumpkin Granola

Zucchini Bread with Pumpkin Granola

If you’re stuck on what to make with Pumpkin Granola, try this delicious bread. It’s perfect for a small outdoor gathering, to gift a neighbor, to indulge in on a cooler night or to slice and put in the work freezer or a child’s lunchbox.

Zucchini Bread with Pumpkin Granola

Note: Instructions have been adapted from Maria Mac’s recipe on Food.com.

Yield: 2 loaves

Ingredients

  • 4 eggs
  • 2 cups of brown sugar
  • 1 cup of vegetable oil
  • 3 1⁄2 cups of flour
  • 3⁄4 teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • 2 cups of grated zucchini
  • About 1 cup dried cranberries or raisins
  • 1 teaspoon of vanilla extract
  • 1 cup of Pumpkin Granola

Instructions

1. Preheat oven to 350 °F. Grease loaf pans. Don’t forget the sides!

2. Combine eggs, sugar and oil. Mix well. Add the dry ingredients. Then, fold in the zucchini, cranberries or raisins (if desired) and granola. Finally, add the vanilla extract.


3. Bake the bread for about 55 minutes, or until a toothpick comes out clean.

4. Cool and slice. We recommend serving warm and topped with butter or the nondairy alternative of your choice. Enjoy!
