Simple Granola Recipe

Ingredients Needed:
11 cups rolled oats (not quick-cooking)
1 cup unsweetened coconut chips
½ cup light brown sugar
1.5 cups pumpkin seeds (pepita seeds)
1.5 cups sunflower seeds
½ cup sesame seeds
2 cups chopped almonds
1 Tablespoon cinnamon
2 teaspoons sea salt
1/4 tsp. cloves
1 cup pure maple syrup
1 cup canola or coconut oil
1/8 cup water
1 T. vanilla
Add only after baked or completey cool:
2 cups dried fruit of your choice

Preheat oven to 350. Spray two large baking pans spray oil. Mix all dry ingredients together. Heat syrup, oil and water in saucepan until blended together. Remove from heat and add in vanilla. Make a well in dry ingredients. Pour liquid into dry and mix thoroughly. Spread into two greased pans and bake for 40-45 minutes until brown and crisp, mixing every 15-20 minutes. Remove from oven and let cool completely. When cool, add dried fruit. Store in airtight containers. Makes approximately 6 pounds. To extend freshness, granola may be frozen.
Enjoy with milk, yogurt, on a cereal of your choice, on ice cream, or added to muffin, bread or pancake mix!
