Warm Weather Granola Dishes

While we cannot get enough of summer, the weather poses a challenge when cooking. Oftentimes, it is too hot to use ovens. How do you make delicious warm weather granola dishes with no oven? We share two recipes below.

Grilled Stone Fruit

Grilled fruit makes for refreshing warm weather granola dishes.

This dish is as simple as it sounds.

“The grilled stone fruit is just that— grilled fruit,” Clare shares.

“I topped it with Vermont Creamery Vanilla Bean Crème Fraîche, honey and granola.”

*Stone fruits are ones in which a pulp or flesh encloses a stone, or pit. Common stone fruits include plums, cherries and peaches.

Chia Pudding

Granola dishes that are sweet, such as this Chia Pudding, are ideal in warm weather.

 

Doesn’t this chia pudding look delicious? The recipe below is a basic one, and can be customized to fit your tastes. “Add whatever flavoring you want, such as some vanilla or maple syrup. It’s up to you,” Clare notes.

Ingredients
-6 tablespoons chia seeds
-2 cups of nondairy milk
-1 tablespoon flavoring, such as maple syrup
½ teaspoon vanilla extract
-Fruit and granola for topping

Steps

1. Mix together the chia seeds, milk, flavoring and vanilla extract.
2. After letting the mixture rest for 5 minutes, stir it again to separate the seeds.
3. Put the pudding mixture in the fridge for about 2-3 hours. Make sure you leave it in long enough to thicken.
4. Divide up the pudding into servings. Top with berries and granola before eating.

These oven-free dishes will keep you feeling refreshed, even during the warmest months of the year.
